This topics course will explore possible pathways for the development of global and local food systems. Currently, 800 million people on the planet are undernourished, another 2 billion suffer from nutrient deficiencies. At the same time, overweight and obesity prevalence is increasing around the world as more urbanized and sedentary populations are eating more energy-dense, highly-processed foods. Growing populations and shifts toward more meat-based diets will place increasing strain on global agriculture, and environmental impacts of agriculture are already unsustainable. This 2-credit seminar-style course will explore how humanity might respond to these challenges. Will high-tech agriculture, armed with sensors, drones, and genetically modified crops and animals, save the day? Or will small, family-owned farms use organic techniques to develop thriving local food systems around the world? The course will focus on reading, discussion, and presentation. Students will explore the current state of agriculture and some of the emerging trends in both global and local food production. Students will also learn from local food system experts, student activists, and community members about challenges and opportunities in the food system. A main goal will be to help students gain empathy and understanding so that they can develop into food-system changemakers. Prerequisite: BIOL 207 or 208. Note this course counts as Biology major elective credits. Note also that this 2-credit course only meets during the first half of the semester.
